Happy World Cocktail Day! Why not enjoy our take on a classic Paloma, using our
refreshing Pink Grapefruit & Basil Sparkling Botanical. 🍸🍃

Serves 2
Ingredients:
Pink Grapefruit & Basil Nuisance
100ml Tequila Blanco
1 Fresh Grapefruit
1 Fresh Lime
Sea Salt
Ice

Method:
Peel 2 strips of grapefruit to use for a garnish before slicing the grapefruit in half.
Squeeze the juice out of the grapefruit. You will need 30ml for each cocktail.
Add lots of ice to 2 tall glasses. Add 50ml tequila, a tiny pinch of salt, 30ml grapefruit
juice, a slice of lime and a strip of grapefruit peel to each glass.
Pour over the Nuisance and give a gentle stir.
Serve and enjoy in the sun. If you prefer your cocktails slightly sweeter, feel free to
add 1tsp sugar syrup.

✨Honey & Harissa Roast Chicken, Asparagus, Goats Cheese & New Potatoes

Serves 4
Total Time: 3 Hours

Ingredients:
@the_big_cheese_making_kit Homemade Goats Cheese
@scottishbeecompany Heather Honey
2kg Whole Chicken
Harissa Paste
1 Lemon
1 Onion
4 Garlic Cloves
New Potatoes
Rosemary
Thyme
Asparagus
Oil
Salt
Pepper

Method:
Add 1 tbsp honey, 1 tbsp harissa, the juice of ½ a lemon, a good splash of oil, salt & pepper to a bowl. Mix well and pour over the chicken. Leave to marinade for as long as you wish. Remove from the fridge 1 hour before cooking.
Preheat the oven to 200˚C Fan.
Place the chicken in a large dish and roast for 20 minutes.
After 20 minutes, reduce the heat to 150˚C Fan. Remove the chicken from the oven and add the new potatoes to the same dish. Place the chicken over the potatoes and add back to the oven for 1 hour 40 minutes.
Remove the Goats Cheese from the fridge.
Snap the woody ends from the asparagus and then trim so they are an even size.
Remove the chicken from the pan and allow to rest for 30 minutes. Strain the juices into a saucepan and keep warm over a low heat. Add some sprigs of thyme and rosemary to the potatoes and place back in the oven.
Once the chicken is rested and the potatoes have crisped up slightly, place the asparagus in a pot of salted boiling water for 2-3 minutes. Drain and add to a plate with a large spoonful of Goats Cheese, lemon zest, salt and a drizzle of oil.
Serve up with some ice-cold cans of @nuisancedrinks for a delightful feast.
