The last day has been a real showering of love from everyone around—near and far—notes of congratulations from this and acknowledgments of hard work. I am proud of this, and so it is all wholly accepted and received vs deflecting the “thank you,” which I’ve been known to do. That’s growth, I suppose.

Since dishing out soup to a few neighbors here in Brooklyn last year to countless pop-ups and 1,000s of soups -this article is something I see as recognition of a lot of damn hours. And I’m so grateful @dalyabenor took the time to learn more about me and the journey and to come out to the soup tour firsthand. 

Without going into too much detail, the soup tour came out of a dire need to hustle to make up for some lost income. A gig last October was just not sitting right. I decided to turn it down, focus, hustle, and cook as many soups as possible in those first few months. 

I say that all to say that when you are in the thick of it, feeling down or confused, there is light on the other side. Door close and opportunities will open up. Light will come on the other side. The act of putting things into the world with love, even as simple as soup, can endure further than imaginable.

Soup has taught me a lot these last eight months. It has given me moments of wisdom that are now branded into my being. 

Friends came out to hang and showed up unexpectedly to things, and it really made my day. There are so many people who I met along the way. 

Thank you to @chef.gabriel.mancilla and @carolineguntert , who were always down to jump in the kitchen & help!

@hotsoup.nyc is a project that will continue to evolve. @essentialherbs.nyc is where all things food, art and community live for me. It is catering, creativity, a focus on local ingredients, and the joy of food.

Let’s share more memories. It is my most incredible honor to cook for you all. Thank you all again for your kind words.

The last day has been a real showering of love from everyone around—near and far—notes of congratulations from this and acknowledgments of hard work. I am proud of this, and so it is all wholly accepted and received vs deflecting the “thank you,” which I’ve been known to do. That’s growth, I suppose.

Since dishing out soup to a few neighbors here in Brooklyn last year to countless pop-ups and 1,000s of soups -this article is something I see as recognition of a lot of damn hours. And I’m so grateful @dalyabenor took the time to learn more about me and the journey and to come out to the soup tour firsthand. 

Without going into too much detail, the soup tour came out of a dire need to hustle to make up for some lost income. A gig last October was just not sitting right. I decided to turn it down, focus, hustle, and cook as many soups as possible in those first few months. 

I say that all to say that when you are in the thick of it, feeling down or confused, there is light on the other side. Door close and opportunities will open up. Light will come on the other side. The act of putting things into the world with love, even as simple as soup, can endure further than imaginable.

We’re often asked about our bestsellers, but today, we wanted to highlight three of our most underrated pieces.

Our friend, chef, artist, and soup aficionado Russell Markus (@russellmarkus), founder of @essentialherbs.nyc (a studio centered on the meeting point of food, art, and community), plated each of them in his own way.

🍽️ The Coupe Crudo Bowl, originally designed for crudo with its flat surface and shallow rim, becomes a natural fit for mezze. Russell used it to serve a vibrant Bulgarian feta, fire roasted pepper sauce, and fermented summer coriander berries.

🍽️ The Serving Bowl, our largest piece by far, is made to hold abundance—we often see it used for a simple salad or for slow-cooked entrees. Here, it was filled with a 48-hour braised lamb neck over winter cabbage.

🍽️ The Union Bowl is slightly deeper and more narrow than the rest of our bowls. The Essential Herbs team plated small bites in them, just as they were designed to be used.
