made this the night before hosting (in literally four minutes) and it was such a hit!! Pretty enough for Mother’s Day brunch, easy enough that I literally make this every week to start my day with a little fiber maxing 😎

2 cups plain low fat Greek yogurt
1 cup soy milk (or milk of choice)
¼ cup honey
2 tbsp vanilla bean paste
¼ cup @eatsimpli chia seeds
Mix together, pop in the fridge at least 2 hours to set
Make Lemon sugar blueberries right before serving: 1 cup blueberries + 1–2 tsp lemon juice + lemon zest + 4 tbsp sugar (can omit the sugar & lemon juice to reduce calories & sugar)
Toss and let sit - add to the top right before serving for that shiny finish ✨
