I remember my first job at Wilhelm's restaurant. I didn't know much about industrial kitchens, but the door to his kitchen was always open, quite literally. He didn't make it seem scary to ask for a job, so I did. Ten years later, I still remember the flavors of every single item on his menu. Now, I'm sitting in front of the salad he taught me to arrange 'as if it would grow out of the plate,' and the bread I would roll into buns during morning prep.
At 9pm he comes out of the kitchen and sits with his guests. There is always an extra chair and a little talk with the chef.
Because of him, I know exactly what I want to bring to the table when my time comes to cook for more people.

To a new chapter...
