Aperitivo hour: Part 2 🤭 Spicy Salmon Sesame Rice Cakes - the perfect looks good, tastes even better appetiser that’ll be gone in minutes. Think spicy salmon with cool and crunchy cucumber, sesame coated rice, furikake seasoning and spring onion curls to garnish. Recipe below, continues in full on my website via link in bio! Save for the next time you host aperitivo hour at home.
Ingredients:
Serves 10-12 - as an appetiser
- 300g sashimi grade salmon, diced into small cubes
- 1 lebanese cucumber, core removed to reduce excess moisture, finely chopped
- 2-3 stalks spring onion,finely chopped
For the salmon dressing
- 1/3 cup kewpie mayonnaise
- 1 tbsp wasabi
- 1 tsp mirin
- 1 tsp sesame oil
- 1 tsp rice wine vinegar
- 1 tsp tamari
- Juice of ½ to 1 lime, depending consistency/acidity of dressing
For the crispy sesame rice
- 1 ½ cups sushi rice
- 1 tbsp rice wine vinegar
- 1 tsp mirin
- Pinch salt
- ½ cup white sesame seeds
- ½ cup black sesame seeds
- ½ cup all purpose flour (or starch), optional can work without but this acts as a binder so cakes hold their shape
- 2 eggs
- Neutral oil, for shallow frying
To garnish
- Sprinkle Furikake seasoning
- Spring onion curls, tops - green parts of 2 stalks finely sliced and soaked in ice bath
Disclaimer: I made two batches - one with medium-grain rice and one with short-grain rice. A short-grain rice I.e. sushi rice is starchier and firmer when chilled in the fridge overnight so I recommend doing this. You can also opt to coat in flour/starch pre egg as a binder.

For the cake
• 3 cups all purpose plain flour
• ½ cup almond meal
• 1 tsp baking powder
• 1 tsp baking soda
• 1 tsp salt
• 1 cup almond milk
• ½ cup freshly squeezed lemon juice
• Zest 3 lemons
• 3 eggs
• 1 tsp vanilla extract
• 1 cup extra virgin olive oil
• 1 cup honey
For the frosting
• 200g crème fraîche
• ¼ cup strained greek yoghurt
• ¼ cup maple syrup
Cake decoration
• 1 sliced lemon, pips removed
• Zest 1 lemon
• Zest 1 orange
• Powdered sugar for dusting (optional)

Seriously good sides: Part 2 😮💨 Crispy curried cauliflower bites. Recipe below, continues in full on my website via link in bio!
Ingredients:
Serves 4 to 6 (as a side)
- 1 large head cauliflower, core/leaves removed and broken into florets
For the batter
- 1 cup plain flour
- 2 tbsp corn flour
- 1 tbsp curry powder
- Pinch salt
- 1 tsp garlic powder
- Around 1 cup soda water (adjust for consistency)
For the spiced panko crumb
- 3/4 cup panko crumbs
- 2 tsp turmeric
- 1 tsp garlic powder
- 2 tsp coriander
- Pinch salt
- Crack pepper
For the cauliflower sauce
- 1/2 cup greek yoghurt
- 2 tbsp crushed tomato
- 1 tbsp extra virgin olive oil
- Juice 1 lemon
- 2 tsp honey
- 2 tsp turmeric
- Generous crack pepper
- Pinch salt
- Splash water (for saucy consistency)
To serve
- 4-5 baby cucumbers, sliced thinly longways
- Sprinkle toasted cumin seeds (optional)
- 10g curry leaves, fried for 30 seconds in neutral oil e.g. peanut oil
- 1 lime, sliced into cheeks or wedges

For the G&T
- 30mls gin per glass
- Large handful ice
- 130mls tonic per glass
- 1 lemon peel
- 3 skewered green olives per glass
For the tomatoes
- 3 large tomatoes grated
- Drizzle extra virgin olive oil
- Pinch salt
- Zest 1 lemon
For the toast
- 1 halved slice sourdough baguette per person (varies per loaf/bread used); toasted over the stove in evoo
- 1 tbsp tomatoes per slice
- 4 tsp finely chopped chives (1 tsp per toast)
- 3-4 anchovies per toast
- Zest 1 lemon (Sprinkle per toast)
- Final drizzle olive oil
