Birria Tacos are definitely a top 5 dinner🔥 and they're even better off the Gravity Series!

Split Chicken Legs n’ Thighs: Simple food, real flavor and everyone grabbing a plate before it even makes it inside. These split chicken legs n’ thighs came out juicy with that perfect balance of sweet smoke and a little kick from the sauce. This is one of those easy cooks that brings everybody together without overthinking it.

Easy Recipe:

- [ ] Chicken: split legs and thighs
- [ ] Base marinade: adobo marinated from my local Grocery store.
- [ ] Rub: sweet and smoky BBQ rub
- [ ] Fuel: Masterbuilt lump charcoal
- [ ] Masterbuilt Dual Fuel Grill

Prep& Cook:

1. Take the marinated chicken out and lightly pat off excess liquid
2. Season all sides with your sweet and smoky rub
3. Fire up the Masterbuilt Dual Fuel Grill to about 350° using Masterbuilt lump charcoal
4. Place chicken in the grill for about 35 - 45 minutes.
5. Flip and finish over direct heat to crisp the skin and get that char
6. Cook until internal temp hits 175° for tender dark meat
7. Rest for a few minutes

Serve it up with fries and a raspberry chipotle BBQ sauce on the side for dipping. Simple, bold and made for sharing.

Chinese Style Ribs w/ @thesmokinelk🍖

For the ribs, they were trimmed, the membrane removed, and then cut into individual portions to maximize the surface area for the rub and smoke. A splash of soy sauce and five-spice was added before they were smoked for about three hours until tender. The ribs were then glazed and finished with fresh chilies, spring onions, and sesame seeds.

GLAZE RECIPE

3tbsp hoisin sauce
1tbsp ketchup
1tbsp honey
1tsp soy sauce
1tbsp Chinese rice wine
1tsp rice vinegar
Squeeze of fresh lemon juice
1tsp ground ginger
1/2tsp garlic powder
1/2tsp Chinese five-spice

Heat then brush generously over the ribs and drizzle the rest on them when serving!

Spring is in full wing, make sure your grill is ready to take it on. 🌱

Seasoning any new grill/smoker removed contaminants, chemicals and oils that remain from the manufacturing process. It’s important to season your grill/smoker prior to its first use. Periodically seasoning your grill/smoker prevents rusting. If rusting occurs, clean it with a steel brush, spray cooking spray oil and fire up the grill/smoker.
