Elevate your summer taco nights with homemade 3-ingredient tortillas made with @kosterina EVOO

Recipe:

Ingredients
1 cup blue corn masa
¾ cup hot water
1 tablespoon Kosterina Olive Oil (use code CHEFBAE for 15% off)
Additional olive oil, for cooking

Instructions
In a mixing bowl, combine blue corn masa, hot water, and Kosterina Olive Oil.

Mix until a soft dough forms.

Cover with a damp towel and let rest for 5 minutes.

Scoop about 2 tablespoons of dough and roll into a ball. Place between two sheets of parchment paper and flatten using the bottom of a bowl until thin and circular.

Heat a skillet over medium heat and add a drizzle of Kosterina Olive Oil.

Cook each tortilla for 1–2 minutes per side until lightly charred and cooked through.

Repeat with remaining dough.

For the Breakfast Tacos

Ingredients
3 homemade blue corn tortillas
1½ cups grilled chicken, sliced
Corn tomato salsa
1 avocado, sliced
Dairy-free sour cream
Cilantro lime dressing
Fresh cilantro, for garnish

Instructions

Fill each tortilla with grilled chicken.
Top with corn tomato salsa and avocado.
Add a dollop of dairy-free sour cream.
Drizzle generously with cilantro lime dressing.
Finish with fresh cilantro and eat immediately.
