So, it’s been 7 months since I’ve embarked into this new venture, and what a a challenge!
Let me share with you all one of my very own first dishes;
“Spinach and Saffron Arancini with black garlic and red onion purée, beetroot purée a baked shallot and a porcini and black pepper jus topped with mushroom crumbs”
Of course it is not a final product but this is a vegan dish that I am extremely proud of; and hopefully with the same guidance and direction I’ve had until now, I hope it will be one of many!
