Almost there.....a few weeks left and the doors will finally open!
The chefs are fine tuning the recipes, the waiters are rehearsing the service, our back of house team are polishing every plate and the room attendants are making sure all the pillows are perfectly lined up.....
A real joy for me to be part of such a unique opening, to witness the true meaning of hospitality and why I choose to work in this industry in the first place.

🇫🇷 Pour moi, l'automne est bien plus qu'un simple changement de saison. Tout change: les couleurs, les produits, les cuissons.
C'est également le retour de la chasse et avec celle-ci des plats comme le faisan à la vigneronne!

🇬🇧 To me, Autumn is much more than a change in seasons. From the colours of the trees, the produce on the market stalls to the dishes we cook....everything changes!
Autumn also means the return of hunting season and dishes like roasted pheasant with grappes!

What a trip....le Cirque de Gavarnie, La Brèche de Roland, le Pic du Taillon, le Pas des Isards, le Glacier d'Ossoue...I wish that everyone could experience the sheer majesty of the Pyrenees.....definitely my little corner of heaven!

Every year around this time I get my wellies and wander out to forage bear's garlic and wild asparagus to prepare one of my favourite Spring recipes.... ricotta gnocchi!

Ingredients (serves 4)
- 100 grams baby spinach
- 100 grams bear's garlic (wild garlic)
- 1 garlic clove
- 140 grams ricotta
- 85 grams flour
- 2 eggs
- 100 grams grated parmesan cheese
- freshly grated nutmeg.

Pesto, olive oil, wild asparagus to serve.
