Clean-out-the-fridge chicken noodle soup × I Can’t Stand the Rain by Ann Peebles. (Recipe ⬇️)

Rich homemade stock, funky depth from black bean paste, tangy hits of kimchi, with buckwheat noodles and shredded rotisserie chicken pulling it all together.

Tastes like staying warm and cozy on those cold nightswith this slow, rainy-day groove on the speakers.

What’s your go-to fridge clean-out combo?

-Recipe-

Chicken Stock

1 ea rotisserie chicken carcass
3 ea carrots
5 ea celery stalks
1 ea onion
5 ea thyme sprigs
3 ea parsley stems
2 ea rosemary sprigs
2 tbsp black peppercorns
3 ea bay leaves
1 ea head of garlic



Soup

1 qt chicken stock
1 pt kimchi (chopped)
1 tbsp fermented black bean paste (Obok Chunjang)
1 tbsp granulated black garlic
1 tbsp gochugaru
1 tsp white pepper
2 tsp MSG
1 bunch scallions
2 ea carrots (medium)
4 ea garlic cloves
1 portion buckwheat noodles



Method (Stock)
• Roast chicken carcass, onion, carrots, and garlic (wrapped in foil) in a 500°F oven until well browned, not burnt.
• Transfer roasted ingredients and any chicken skin to a crockpot or stockpot. Add cold water to fully cover.
• Bring to a boil, skim impurities, then reduce to a simmer for 6–8 hours.
• Add aromatics during the last hour of cooking.



Method (Soup)
• Heat neutral oil in a Dutch oven or soup pot over medium heat.
• Sweat scallion whites and garlic for 2–3 minutes.
• Add carrots and cook for 1–2 minutes.
• Add spices and cook for 1 minute.
• Add kimchi and black bean paste; cook for 5 minutes.
• Pour in stock and simmer for 30 minutes.
• Add chicken in the last 5 minutes; season with salt to taste.
• In a separate pot, cook buckwheat noodles in boiling salted water (fresh noodles cook in just a few minutes).
• To serve: place noodles in a bowl, ladle over soup, and garnish with scallion greens and chili crisp.
