Christine Riddle, bartender extraordinaire at Milwaukee, Wisconsin’s own Birch Restaurant, stops by to take a break from her birthday celebrations in the Windy City, to talk about her love of travel, midwest hospitality, and serving drinks on rollerskates.

Years ago I came across the remnants of a karaoke bar in Cat Ba Vietnam. Though little remains there is something about this aesthetic that inspires a vibe I would one day like to recreate.

For the Shake Your Talent competition, I present “Like a Rolling Stone Fruit”, featuring Disaronno Amaretto, a liqueur infused with apricot kernel oil, offering a delightful nutty flavor. To accentuate its natural fruitiness, I added a touch of peach syrup. Fino sherry is the backing spirit that also has a nutty flavor but a drier palate. Complementing these flavors are ginger liqueur and Orleans bitters, lending a nuanced touch of baking spice. And a squeeze of fresh lemon juice balances and brightens the cocktail. The finished product is crisp, refreshing, and very approachable.

Lustau Fino Sherry
Giffard Ginger of the Andes
Real Peach Syrup
Lemon Juice
Scrappy’s Orleans Bitters
Garnish with a mint bouquet and a marigold

Preparing this cocktail in volume will be swift and efficient with batching. I’ve carefully chosen simple and non-effervescent ingredients, allowing for preemptively building the cocktails and simplifying the process during service to pouring the batch, shaking, straining over ice, and garnishing with mint and a marigold. The mint adds a clean and fresh note, but the cocktail retains its integrity without it, enabling further streamlined service if desired. You could also shake andpour without straining over fresh ice if you really need to pour out a large quantity in a brief period of time.
