Make the most of these warm, sunny days and the short elderflower season by making this elderflower-infused vinegar. It is quick and easy to make, and a wonderful addition to any pantry.

Using floral, summer-inspired flavors in your salad dressings is a total joy, especially during the dreary winter months. It'll last for yonks and using raw organic cider vinegar makes it a great gut loving ingredient to use in any dish.

- 30 elderflowers heads
- 1 litre of raw, organic cider vinegar
- A few bay leaves + a sprinkle of peppercorns

Collect your elderflower blooms on a warm, sunny day, when they smell sweet and fragrant. Shake the blooms to remove as many insects as possible, and snip away as much of the stalks as you can.

Add to a sterilized jar, add the vinegar and aromatics, and leave to infuse for 48 hours. Strain the mixture thoroughly using a muslin or nut bag, and decant it into a vinegar bottle. It will last indefinitely in the cupboard.

We all need quick and easy meal ideas, which are versatile and are full of fiber and protein.

These FRIDGE RAID FRITTERS are a household staple and a great way to use up all your vegetable odds and ends sitting unloved in the fridge.

Use any vegetables you have lying around. Here I've used carrot, broccoli, courgette, sweet potato, sweetcorn + coriander.

Grate or chop the larger veg and blitz half the mixture with some salt, pepper, thyme + dried mint.

Add a couple of beaten eggs and a few spoons of chickpea flour (gluten free and high in protein), then mix until you get a mixture which will hold together like shown here.

Fry in batches in hot olive oil, flipping once (you can use two spoons to dollop the mixture, and not your hands like me lolll)

Transfer to a lined tray and finish cooking in the oven until cooked through (10 - 15 mins at 190)

Serve with a squeeze of lemon, some fresh mint, a sprinkle of feta, or just simply with a dollop of yogurt and some sliced cucumber. Enjoy!

When the shoots are emerging in early spring, sprinkle the soil around them with chilli flakes and oats. The method in the madness being that the oats will stick to the slugs and snails so they'll stay away, and the chilli flakes are deter squirrels and larger birds who might peck at the oats or dig at the soil, damaging the young shoots.
