Potato Filling:

750 gm boiled chopped potatoes
2 tbsp Ghee (don’t use oil please)
1 tsp crushed garlic and chilli
1 medium onion finely chopped
2 inch ginger finely chopped
2 green chillies finely chopped
1/4 tsp turmeric powder
1/2 tsp chilli powder
1/2 tsp chilli flakes
1 tsp roasted crushed cumin
1/2 tsp coriander seeds crushed
1/2 tsp nigella seeds
1 tbsp fenugreek leaves
Salt to taste
A squeeze of lemon (optional)
Fresh coriander leaves chopped a handful

White onions or salad onions x 2
1 tbsp sumac
Generous pinch of citric acid
Salt
Chopped parsley
Lemon juice

Mother’s Day Special My mum’s Favourite: Mango Shortcake

Ingredients:
Chiffon Cake: 28” pans, greased and lined
🥭6 large eggs
🥭200 gm Granulated sugar
🥭195 gm Cake flour plus 5 gm of cornflour
🥭warm Milk 30 gm
🥭warm vegetable Oil 60 gm
🥭Vanilla extract 1 tsp
🥭1/2 tsp Baking powder

Whisk the eggs and sugar for 8-10 minutes and then add the rest of the ingredients one by one as shown, folding in gently
Bake for 180 C with a water bath for 35-40 minutes

* Adjust the time & temperature accordingly.

Filling and topping:
🥭Double cream 600 g
🥭Granulated sugar 45 g
🥭Vanilla extract: 1/4 tsp
🥭 3-4 large mangoes
