Carrot Cake with Cream Cheese Frosting cc @alexfdamour this was her request🥰and yes she has had this cake years ago when PICNIC just started🥕🥕🥕
Cake:
400g sugar
Zest of 1 orange
4 eggs
220g avocado oil or olive oil
320g AP flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp ground ginger
¼ tsp cardamom
¼ tsp clove
3 cups grated carrot
330g crushed pineapple (1 can, drained)
1 cup walnuts or pecans
½ cup raisins (or shredded unsweetened coconut or more walnuts if preferred)
Preparation:
Preheat oven to 330F on convection bake. Grease and line 2 x 9” pans.
In the bowl of a stand mixer, measure out sugar and the orange zest and combine till it looks like wet sand. With the whisk attachment fitted, mix eggs and sugar until light and fluffy - 2 mins on medium high. Then stream in the oil on medium to to emulsify.
In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom and clove until well combined.
Add to the wets on low, in two additions. One combined, gently fold in the grated carrot, pineapple, nuts and raisins (if using) with a spatula.
Divide evenly between 2 pans. Bake for 40-45 minutes, until a skewer comes out clean and it’s pulling away from the edges of the pan. Let it rest in the pans for 15 minutes, before carefully inverting onto a wire rack to cool fully.
Lemon cream cheese frosting:
255g butter
450g powdered sugar
1-1 ¼ tsp salt
40g white chocolate, melted and at room temp
Zest of a whole lemon
2 x 8 oz. packs of cream cheese - cool but not straight out of the fridge
15g milk powder
4-6 tsp lemon juice
Melt 40g white chocolate and set aside till it’s room temp.
In a stand mixer with the paddle attachment fitted, or with a handheld mixer, beat together butter, icing sugar and salt together until smooth. Add in melted white chocolate and lemon zest. Mix, then add in lemon juice and milk powder. Finally, add cream cheese in large chunks. Once it’s come together, taste and adjust accordingly. Then build your cake, and store in the fridge. ENJOY!

Peanut Butter Banana Bread w black sesame swirl
Ingredients:
195g AP flour
20g almond flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
165g brown sugar
2 eggs
2 tsp vanilla
135g EVOO
85g sour cream
4 very ripe bananas
30g natural peanut butter
1-2 tbsp black tahini
Method:
Preheat oven to convection bake at 325F or conventional bake at 350F. Grease a 9” x 5” loaf pan.
Mix dries together in a bowl BG enough for all ingredients - AP flour, almond flour, baking powder, baking soda, salt, whisk to combine and set aside.
Mix wets - brown sugar, eggs, vanilla, oil, sour cream, mix well and sit aside.
Mash bananas till almost homogenous, leaving a few bigger chunks. Then mix in @onetrickponynuts peanut butter. Pour your wets into the banana PB mixer and mix.
In two additions add your wets into your dries. Then pour into the greased loaf pan and spoon on 1-2tbsp of black tahini if using, swirl it around with a skewer or knife, then sprinkle with Demerara sugar.
Bake for 55-65 mins until it springs back nicely. If your loaf pan is smaller than 10” x 5” do not overfill it, it will overflow. Use any extra mixture in one or two muffin pans :)

Passionfruit Almond Ricotta cake Ingredients:
200g sugar
Zest of a lemon or mandarin
6 eggs
250g blanched fine almond flour
1 tsp baking powder
1/4 tsp salt
120g whole milk ricotta
180g passionfruit puree (unsweetened)
40g blanched fine almond flour
Glaze:
2 fresh passionfruit, seeds in.
1/4 tsp salt
120g powdered sugar
Method:
Preheat oven to 325F convection bake. Grease an 8” springform pan, and line the bottom.
In a large bowl or bowl of a stand mixer combine zest and sugar and mix till it resembles wet sand. Add in 6 eggs. On medium speed, whisk for 4-5 mins till pale and ribbony.
While it’s whisking, mix dries - almond flour, baking powder and salt, whisk. Then mix passionfruit slurry - ricotta, passionfruit and the 40g of almond flour.
Add passionfruit slurry into whisked eggs till just combined. Now add in dries till mixed. Scrape down the sides of the bowl and mix again once more by hand with a spatula.
Pour into your pan, bake for 50-60 mins at 325F. 55 mins should be the sweet spot. If you’re probing with a thermometer- internal temp should be 205F.
Cool in the pan for 10 mins and then run an offset spatula around the edge and remove the ring, then carefully the base. Leave to cool completely on a cooling rack.
Once cooled, make your glaze by whisking all ingredients. Spread over the top of the cake. ENJOY!💛keeps well for DAYS.

Flourless chocolate olive oil cake with espresso mascarpone whip
Ingredients
100g white sug
100-125g brown sug - I usually do 100g but 125g will keep it fresher for longer without it tasting too sweet either
3 large eggs, room temp
2/3 c olive oil
2/3 c hot coffee
1 tsp vanilla
85g dark chocolate, melted
175g almond flour
90g dutched cocoa powder
1/2 tsp diamond crystal kosher salt
1/2 tsp baking soda
Maldon for the top
Espresso mascarpone whip
226g/8oz mascarpone
226g heavy cream
40g powdered sugar
1 shot espresso or 1 tbsp water with 2 tsp instant coffee dissolved into it
Method
Preheat your oven to convection bake 350F and grease an 8” springform cake pan (9” would work too) Grease the sides, line the bottom.
Melt your chocolate and set aside. Make your coffee and set aside. In a bowl large enough for all ingredients, mix your wets - sugars, eggs, olive oil, vanilla. Then add in the melted chocolate and mix till well combined.
In an another bowl box mix your dries, sifting in the cocoa powder and baking soda and salt. Whisk. Add the dries into the wets and mix till combined. Your final step is to add in the hot coffee, add half, mix. The rest, mix again. Pour into the cake pan, and sprinkle the top with maldon if ya have it on hand. Choc + salt =🤝🏼🤌🏽
Bake for 40-50 mins. Check at 40. Mine usually takes 45, but both my ovens are always on fan bake. Since this is a super moist, fudgey textured cake, a skewer might not necessarily come out perfectly clean. So use your best judgement here. If it’s still jiggly in the center, give it another 5 mins. One done, give it 10 mins out of the oven before running an offset spatula around the pan and taking off the ring. Let it fully cool on the base of the pan on a cooling wrack.
While it’s baking, make the mascarpone whip. In a bowl combine all ingredients until the whip is still and holds its shape. Set aside with cling film over the top in the fridge till cake is cooled and ready to use. If this softens up during that time, just rewhip it before using.
