I had no idea how much everyone likes French Onion Soup! 🥖🧅 It’s like an old friend or oversized sweater-it just feels cozy (my favorite word, by the way). I’ve tried many recipes but this one from @epicurious, using a bit of sherry, is our family favorite. I haven’t had time to put it on my website but here’s the recipe below...

Recipe:
•5T butter, divided
•1T olive oil
•4 medium Vidalia onions, halved and sliced thin
•salt and pepper
•1/2t granulated sugar
•1 1/2 C white wine
•6C beef or chicken stock
•2 bay leaves
•10 sprigs fresh thyme
•1 baguette
•1 garlic clove
•2t sherry
•1C grated gruyère cheese

1. In a Dutch oven melt 3T butter over medium heat and add the onions. Stir occasionally until softened, about 15 min. Add salt and pepper to taste, and sugar, and continue to cook until the onions are caramelized and brown, approx 45 min.
2. Add wine and raise heat to high. Cook until almost all the liquid has evaporated about 8 min
3. Tie thyme and bay leaves in a bundle with kitchen twine. Add broth and herbs to the pot. Bring to a simmer, 20-30 min. Stir in remaining butter (optional).
4. Meanwhile, cut the baguette into 1/2 slices. Broil in the oven I til toasty. About 1 min per side. Rub one side with the garlic clove. Set aside.
5. Place oven safe bowls on a baking sheet. Pour 1/2 t sherry into each. Ladle soup on top. Place the baguette slices on top (2-3). Cover with cheese and broil until the top is bubbling and toasty.
