Using just a few basic ingredients, this easy yet seemingly luxurious recipe tastes like something you might find on the menu of your favourite seafood restaurant. Traditionally made with clams, we’ve given this recipe a Skipper Otto twist by using our incredible pink and spiny swimming scallops instead. The frozen scallops steam in a heavenly mix of garlic, chilli and white wine, allowing the briny flavour of the scallops to infuse and create the perfect light sauce for the spaghetti.

Now, don’t get us wrong, we love a good fish taco. But now and then, we love to shake things up, and this recipe is just that! Inspired by the viral smashed taco trend, we’ve blended our Northern pike fillets with a few flavour-packed spices to create a smooth paste that easily spreads over your favourite tortillas. Once prepared, the tortillas are pan-fried fish-side down, then flipped and finished on the other side. You can then top your tacos with your favourite toppings, whether it’s a fresh, punchy slaw or a quick salsa.

This recipe begins with cabbage wedges that are seared over high heat until tender and beautifully charred. Lightly floured walleye fillets (commonly known as pickerel) are then added to the skillet to gently brown in butter before being set aside while the luscious miso mushroom sauce is made. The creamy, umami-rich sauce perfectly balances the delicate flavour and texture of the fish. You could serve alongside rice, potatoes, or even orzo - the opportunities are endless.

Dare we say the perfect Easter recipe? Our wild Arctic char wellington really is the ultimate seafood centrepiece!
Ingredients:
- 1 Arctic char fillet (approx. 500g)
- 1 lemon, zest and juice
- 1 bunch rainbow chard
- 1 shallot, finely sliced
- 2 garlic cloves, minced
- 2 tbsp salted butter
- 1 Herb & Garlic Boursin cheese
- ⅓ cup heavy cream
- 2 tbsp fresh thyme leaves
- 1 sheet puff pastry
- 1 egg, beaten
- Salt and pepper
Directions:
1. Preheat oven to 400°F.
2. Remove the skin from your char fillet, pat dry with paper towels, then season generously with salt, pepper and lemon zest.
3. Melt the butter in a large pan over medium-high heat. Sauté the rainbow chard stalks and shallots for 3-4 minutes until softened, then add the garlic, chard leaves and thyme. Cook for another few minutes until soft and fragrant.
4. Add the Boursin cheese, cream, the juice of half a lemon, and a generous crack of salt and pepper. Stir to combine and set aside.
5. Roll out the puff pastry on a lightly floured surface. Add spoonfuls of chard mix to one side of the pastry, then place the prepared Arctic char fillet on top. Top with spoonfuls of the chard mixture, then fold the pastry over the fish like a flap. Using a fork, gently press the edges together to seal the wellington. Brush with egg and use a spoon or fork to add any designs of your choosing. Finish with a sprinkle of flaky sea salt.
6. Bake for around 25-30 minutes in the oven or until the puff pastry is perfectly golden.
