There’s a difference between picking a plant and knowing one.

As the forager behind Meadows & More, @meadowsandmore Tama Matsuoka Wong built her practice around a deep understanding of the land. Her mission starts with respect: leave the native and endangered species alone, take from the weeds and invasive plants, and stay attuned to natural cycles. It’s a relationship, not a transaction.

We spent a spring day with her in Hunterdon County, New Jersey. Life slowed down.

Bulgogi Style Street Tacos 🐮 🌮

Turn @freshdirect ‘s Korean-style marinated short ribs into the ultimate summer street tacos 🌮🔥 Sweet, smoky, spicy, and loaded with crunch in every bite. The gochujang crema takes these over the top… and honestly, I’m already making them again this weekend.

Gochujang Crema:
5 oz nonfat Greek yogurt
1–2 tbsp gochujang paste
Half a lime, juiced
~1 tbsp cold water
Add everything to a blender and mix until smooth and creamy.

Apple Slaw:
1 cucumber, diced
1 green apple, diced
2 tbsp rice wine vinegar
1 Lime, juiced
1/2 shallot, diced
1 tbsp honey
Salt
Sesame oil
Whisk together the vinegar, lime juice, honey, and salt. Toss with the cucumber, green apple, and shallot, then finish with a drizzle of sesame oil.

Grill the Korean short ribs, chop them up, load into warm tortillas, top with the slaw and crema, and enjoy 🌮🔥

My go-to green chopped salad recipe:

Serves 6

3 cucumbers, chopped small
4-5 celery stalks, chopped small
1-2 fennel bulbs, chopped small
1 bunch fresh dill, parsley, or cilantro, finely chopped
1 cup toasted walnuts or pecans, chopped 
1 cup shredded parmesan (optional)
1 teaspoon Dijon mustard
Juice and zest of 1 lemon
4 tablespoons extra virgin olive oil
1 teaspoon salt
Freshly ground black pepper

Make the dressing: place the Dijon, lemon juice, salt and a few cracks of pepper into a large bowl and whisk until the mustard dissolves. Slowly whisk in the olive oil until an emulsified dressing comes together.

Assemble the salad: add the cucumbers, celery, fennel and dill into the bowl with the dressing. Toss the salad until everything is mixed well. Taste and adjust seasoning if needed.

It is pure, sweet goodness in a bowl 🥭✨ So so fragrant. I’ve made 2 batches and we finished it all in a day!

You need:
•5 @savanifarms Alphonso mango (cut into cubes)
•1 tbsp of honey
•Juice of a small lime

-Freeze the mango overnight
-Once frozen, take the mango out of freezer and let it sit for a min
-Blend mango with honey and lime juice until smooth
-Enjoy immediately or freeze for later (let it thaw a few min before serving)
-Highly recommend zesting lime on top right before serving

I tried this with store bought frozen mango and it’s not as fragrant and smooth as freezing your own top quality #mangoes 🥭 Seriously better than any pint you can buy #homemade

🎾 Tennis Mango Pops:
- Cut out fresh mangos into round shape
- Line with refrigerated greek yogurt
- Refrigerate for 3 hours
🥭 Mango Yogurt Popsicles:
- Slice leftover mangos into small cubes
- Blend 3 mangos + a cup of ice + 1 @whitemoustacheyogurt greek yogurt
- Pour into popsicle molds with small mango chunks
- Freeze overnight
🥭 Mango Lassi:
- Pour remaining mango yogurt blend into dessert dish
- Add remaining small mango chunks and @goodnessgardens organic mint 🌱

3 ingredient Saffron mango sorbet 🥭🥭

Recipe:
- Peel and freeze 3 Indian mangos
- Make a simple syrup which is usually 2 cups sugar, 1 cup water, and 5 saffron strands let that boil for 3 minutes
- Once the mango is fully frozen add all of the mango with 1/2 cup of the saffron simple syrup and blend until creamy
- Top with pomegranate seeds (optional)
