Belated Happy Publication Day to @hughfearnleywhittingstall. I’m loving his new book High Fibre Heroes and made thisLemony Mushroom and Fennel Couscous last night - utterly delicious (and fittingly had it paired with a herb and leaf salad foraged from the River Cottage kitchen garden).

Each recipe in the book tells you how many plants and how much fibre you’re getting - both incredibly important for nurturing a healthy microbiome.

My book is already looking dogeared as I’ve earmarked loads of other recipes to try, including:

* Spinach and Lentil Gratin - which I’m planning to make with wild garlic added to the mix
* Roasted Saag Aloo
* Hot and Sour Broccoli and Black Bean Broth
* Spicy Peanut Butter Broccoli Stir Fry
* Carrot Lasagna
* Double Lentil and Barley ‘Bolognaise’
* Mushroom and Kimchi Sourdough Sarnies

One of my favourite spots in the UK is the most south-westerly tip of Cornwall, the stretch of coast from Penzance to St Ive and last weekend I had the luxury of staying in the most gorgeous hotel in the area @chapelhousepz as a reconnaissance for a Spring Equinox Retreat I’m co-hosting with one of my favourite fellow fermentors Rachel Booth of @newlynfermentary next Spring (19-21 March 2027).

I indulged in all Chapel House has to offer: hot tub with sea view under the blossom of a gorgeous quince tree and sauna. I took a cold plunge in the sea midway as I walked the coast stretch from the hotel to Mousehole via Newlyn - where I stopped @lovaetts_newlyn for the best coffee (and I nabbed a stunning organic Venetian wine to tote home). There’s massage and a beautiful array of treatments from @yolandephilpottsmobilespa. And then of course, there’s the Newlyn Fermentary who make some of the most exciting kimchis, water kefirs, jun and kombuchas, krauts, kvass and kimchi-cultured cashew cheese.
