I visited London for the first time in a while, and celebrated my birthday with an unforgettable meal at Ikoyi. I walked through the city, enjoying the beautiful illuminations. I bought some clothes from my favorite brand, Drake’s, and visited a museum to see an exhibition. Of course, I didn’t forget to stop for coffee along the way.
On the last day, I held a brewing and cupping event at London Calico, where I introduced Klover. It was great to meet again the Customers who had already visited Klover in Paris, and I had a wonderful time meeting many new people as well. On my way back to Paris, I thought about how I first started my coffee journey.

We’re excited to welcome Harry Kim @__amuser , founder of Klover Coffee Paris @klovercoffee.paris , to Calico Coffee for our next Guest Session — a special Bar Takeover & Cupping Sunday, 30 Nov.
Klover, short for Kaffe + Lover, is built on a simple belief: coffee should spark everyday happiness. Inspired by Harry’s time at iconic Scandinavian roasteries Fuglen and April, Klover pursues a clean, bright, and expressive cup profile that celebrates the essence of Nordic coffee culture.
From thoughtful green bean selection to precise brewing, Harry brings a calm, intentional approach that shines through every cup.

パリでお店を開けて2週間。完全に新しい環境で始まる自分のビジネスは不安もありますが、東京からの縁、コペンハーゲンからの縁もこちらで会えて嬉しいし、新しい出会いもあって楽しく過ごしてます。コーヒーは人との関係を作ってくれてありがたいですね。これからも楽しく一人一人お客さんが良いお時間過ごせるように精進して行きます!😊

2023年11月のコーヒー日誌
エイプリルコペンハーゲンで勤務を終え、ソウルカフェショー期間中にお手伝いで働いた後にエイプリルでの卒業。
その後2年振りに東京へ行ってゲストバリスタの機会をいただきました。今回ポップアップのために用意したコーヒー豆は8kgで、一人でポップアップを進行するので、このコーヒー豆を使い果たすためにはどのように宣伝をした方が良いなのか、お客様にどのように間接的にエイプリルを体験できるように私がサービスを提供した方が良いなのか、一人の印象がブランドイメージに影響を及ぼす可能性があると思って自分がどう努力した方が最善なのかたくさん悩むようになる良い経験になりました。
それぞれの場所に行ってレシピを設定するために、自分で3回以内に決めるように努力しました。新しいセットアップ、グラインダー、バーの移動動線、それぞれ異なる水のプロファイルなど、私には大きな勉強になりました。この経験は未来の私にとってまた大切な土台になりそうで嬉しいです。
この数日間、訪ねてきてくださったすべての方々に心から感謝し、私はこれからもお客様に良い思い出とサービスが提供できるバリスタになるために精進していきたいと思います。
久しぶりに日本で大切な縁をまた会えてとても幸せでした。
そしてこの度多くの方々と出会いの場を提供してくださった皆様に心より感謝申し上げます。
