Ambitious chefs — some trained in Latin America’s best kitchens — are finding new ways to present Dominican cuisine and feature local ingredients in refined settings. Olivier Bur of Cassaré (@cassare.sdq), Gabriel Tejada at Tenú (@tenu.restaurante), Inés Páez Nin (aka Chef Tita) at Aguají (@aguaji.altacocina), and Venezuelan chef Saverio Stassi at Ajuala (@ajualard) turn out hyperseasonal menus and highlight local producers, all while supper clubs, vegetarian pop-ups, and experimental bakeries push boundaries in all directions.
