Five hundred parrots.

That was one of the Pattisons’ marketing campaigns — birds trained to squawk “Buy Pattisons’ Whisky,” sent out to pubs across the UK.

The brothers went from dairy wholesalers to whisky magnates, and they knew how to sell.

The whisky was good. The bookkeeping wasn’t.

Done for fraud after embezzling a fortune, they nearly took the whole Scotch industry down with them — no new distillery was built in Scotland for fifty years after.

A million wine bottles a week.

That’s what Leith was producing in the 1800s — mostly shipping out to France and Spain. Wine storage here goes back to at least the 16th century, and the port was the engine of it all.

Then grape phylloxera wiped out Europe’s vineyards in the 1880s and whisky got its big break. The bottle-makers pivoted overnight, and Scotland’s finest had its global moment.

Bottled by Thompson Bros @dornochdistillery exclusively for @one.or.two.melb — Andy Chu’s tiny whisky den in Melbourne’s Chinatown, one of the best in the country.

One of only 248 bottles. Now sitting on the back bar in Leith. Pop in for a nip while it lasts 🥃
