Dinner finishes, but nobody seems particularly interested in leaving the fire afterwards.
Herbal teas arrive first — nettle, chamomile, lemon balm — still carrying traces of the woodland they were gathered from earlier in the day. Then marshmallows appear, and with them the familiar spectacle of adults attempting to achieve the perfect balance between caramelisation and complete incineration.
Some are blackened within seconds. Others are rotated patiently over the embers with near-professional concentration.
The smoke settles into clothes, tea cools slowly in enamel mugs, and conversations loosen into something softer and less structured than they were at the table.
A very good way to end an evening, honestly.

We’re always happy to see courgette flowers come into season.
They arrive briefly, disappear quickly, and somehow manage to feel both delicate and surprisingly resilient once they hit the fire.
We tend to work with them in different ways — sometimes stuffed, sometimes grilled, sometimes folded through warmer dishes as the evenings stretch longer and the cooking shifts with them.
They take on smoke beautifully. The flavour deepens, the texture softens, and they become something quite different from what they were to begin with.
Perhaps part of the appeal is that they never stay around for very long.
Like most good things this time of year, they ask to be noticed while they’re here.

There’s something special about sitting down to dinner somewhere that doesn’t feel expected.
No walls, no city noise, no sense of being rushed through the evening.
Just long tables in the woodland, fire cooking, good food, and a space that allows people to settle into the experience properly.

Elderflower is out at the moment, and it’s always the same instinct at the start of the season to take as much of it as you can — to bottle it, preserve it, make something from it while it’s there.
We did that in the first year we ran our events, picking freely and using it for everything we could think of, which made sense at the time, until later in the year when the elderberries never came, and we realised we’d taken more than we should have, too early in the cycle.
Since then, it’s shifted slightly — taking what we need, but leaving enough behind for it to turn into something else, to let the season run its course rather than interrupt it.
There’s something quite grounding in that, the idea that not everything needs to be used at once, and that holding back, even slightly, often gives you more in the end.

Everything tends to find its place quite naturally out here.
Not because anything is overly controlled, but because we’re working with what already exists.
The woodland has its own rhythm. The light shifts. Things bloom briefly, disappear again, return in another form next year.
You start to realise that good environments don’t come from imposing too much onto a place. They come from paying close enough attention to understand what the place was already trying to become.
The materials, the food, the flowers, the smoke, the conversations around the table.
Very little needs forcing.
And perhaps that’s why, when something does finally come together properly, it feels less like something manufactured and more like something uncovered.
