I have a special guest on today’s episode. My ba ngoai (grandma)! She came to visit and is teaching me how to make one of her specialties: Bò Kho, Vietnamese beef stew.

It’s a super easy recipe (sorry, no exact measurements, we cook the Vietnamese way 😅).

My grandma raised me since I was little, we don’t live in the same town so anytime I get to spend time with her is a treat 🫶🏼

Directions
1. Clean or parboil the meats first. Then marinate the beef – Toss the beef with garlic, shallots, ginger, fish sauce, soy sauce, sugar, and the bo kho spice. Let it rest for at least 30 minutes (overnight if possible).
2. Sear the beef – Heat oil in a large pot, add aromatics garlic, shallots and lemongrass cook about couple of minutes and add the beef and seared until browned.
3. On another pot add coconuts water (use coconut water instead of water!) add lemon stalks make sure it comes to a boil first then bring the seared meats over.
4. Simmer – add more water (or beef broth for richer flavor). Bring to a boil, then lower to a simmer. Cook until beef is tender (about 1.5–2 hours).
5. Add carrots – About 30 minutes before it’s done, add the carrots so they cook through but don’t get mushy.
6. Taste & adjust – Balance the flavors with more fish sauce, sugar, or salt as needed. (Bonus step. Add corn starch into the pot to your desire consistency. I like my broth thicc)
7. Serve – Garnish with fresh herbs. Enjoy with warm baguette, rice noodles, or steamed rice.

Hope y’all learn from me. If you book any flight after 12pm night time you gotta go a day before.

Example. If it says Monday at 12:30am you gotta go Sunday night at 12:30am. (which is actually Monday morning)

Di uong cafe! “Let’s go drink coffee”

Coffee culture in Vietnam is enormous, it’s a way of life here. People gather together, sit on low stools around small tables, catch up, and just talk.

That or “di nhau” = go drinking.
