Wein Goutte is the project of Emily Campeau and Christophe Müller, a former chef and sommelier who left restaurant life behind to make wine rooted in care, creativity, and sustainability. After meeting during harvest in 2018, they moved to Franconia in 2021 to take over the organically farmed vineyards of Linda and Erhard Hassold.

✨🍝 THE PAIRING SERIES 🍝✨

This week, we are taking a closer look at SCHLADO, a light red that has a knack for getting the party started. Mischievous, earthy, showing hints of smokiness and/or spice, this wine has quite the personality, without compromising on lightness and quaf-faktor.We always advise getting two bottles; one to drink while you are barbecuing, the other one for when you sit down when the food is ready. 🔥

Schlado pairs with a large palette of flavors, it loves a roasted veg (summer or fall edition), mushrooms, sausages (dry or wet). It will also be a great companion to offal, like grilled hearts, liver pâté, tripes in an oily tomato sauce. Try it over ratatouille/caponata, muhamara, romesco sauce, spicy tomato chutney…or just a bag of ketchup crisps. Oh, and PIZZA! 🍝🥫🍕

2. Roasted oyster mushrooms, burnt onions, chicken jus, parsley oil 🧅

🍎 Vin de Pommes 🍏 Apfelwein 🍎

☀️Warm days are making a comeback in Unterfranken and this weekend is going to be heisssss (and we very much hope it’s not going to stop raining for the next three months 🐪)

🧺But here is an excellent reminder that Vin de Pommes is a perfect picnic friend, a great choice when you want less alcohol without compromising on taste! Clocking at 7%, our Apfelwein was fermented to dryness, and bottled at the same time and with the same care than our wine.

🧀It is a lovely companion for food, pictured here with cheeses and poached fruit from our winter pantry, as well as a pintxo we love from @martibuckley's book, made of leeks and ham salad served on toasted bread.

🧊...Psssst! You can also serve the Vin de Pommes over ice cubes during hot days by the pool. No judgement, just vibes.

L’expression allemande « schlado » est une contraction historiquement utilisée pour maudire une journée de travail trop longue. Quoi de plus approprié que de la convertir en une ode au week-end de trois jours? 🙂‍↕️

-> Schlado par @weingoutte: un assemblage de cépages rouges dont le Domina, vinifera typique de la Franconie. Un vin frais et très digeste, le premier dans ce style du portfolio de Emy et Chris — et ils en sont très fiers! De délicieux arômes de petits fruits rouges s'entremêlent à des notes de sous-bois, de "third wave coffee beans" et d’une touche de livèche séchée.

Sans trop réfléchir, direction BBQ entre ami-es. Le meilleur genre : ceux qui sont spontanés et qui finissent plus tard que prévu, même s’il fait un tantinet frisquet.

MEET OUR PRODUCERS: WEIN GOUTTE, Germany

Rooted in the heart of Franconia’s Steigerwald since 2021, Wein Goutte is the project of Emily & Christoph, former restaurant professionals who traded service for the cellar and vineyards.
Taking over an organically farmed estate cultivated without chemicals since the early 1990s, they are shaping wines that reflect both curiosity and place.

As newcomers to Franconia, their understanding of the Steigerwald terroir has evolved vintage after vintage: limestone-rich soils, cool forest influences, and steep slopes that bring freshness, minerality, and precision to the wines.
Their approach is low-intervention and expressive, letting the character of the grapes and landscape speak for itself.

Alongside wine, Wein Goutte also produces cider and vermouth, extending their craft beyond the vineyard while staying deeply connected to the region’s agricultural traditions.

👩🏽‍🏫 PiWi School is in session again! 🍇

Buckle up, it's a dense topic. It is quite the challenge to make these videos as succint as possible, while delivering a staggering amount of information. But we are excited to try! 📕

We would have loved to make more distinction between resistance to fungus vs climate, or explain how breeders use their said little brush and scissors. Like a new variety, maybe it'll take us 25 years of videos to explain in more details.

It's also safe to write here that although PiWis are not GMOs, modern research is hard at work to try and modify grapevines using gene editing. They are doing this with the goal to change so-called noble varieties' DNA to be more resistant to diseases without altering their taste too much and also to intensify the resistance of new varieties hitting the market. The first field trials of these grapes started a few years ago. 🧬
