I’m very sad to lose one of the great authorities on Greek food, an incredibly talented chef, cook, food writer, mentor, and dear friend, Aglaia Kremezi.
Aglaia shared so much with the world through her recipes, writing, and generous teaching in her home on Kea. I will cherish the memories of our many travels together with @oldways_pt , and all that she taught me with such warmth, generosity, and passion. She was a legend, a great enthusiast for truly delicious food, and always showed so much support and love to her restaurant families and community.
I will always remember her, carry her recipes with me, and continue making so many of the dishes that I love because of all that she taught me.

@row7seeds partnered with @sortunchef for the #midnightsnackchallenge to come up with a quick and easy late night recipe. Combining fresh halloumi with Row 7’s new tinned Sweet Prince Tomatoes and Sweet Garleek, she was definitely up to the task!

People notice the awards.
The lines out the door.
The beautifully plated dishes.

But most don’t see what’s behind it.

I happened to catch a family run company @think.pure doing a maintenance check on the water filtration system at Sofra Bakery & Cafe... and it was a reminder:

This is what EXCELLENCE actually looks like.

Not just a celebrity chef.
Not just a delicious menu.
But the decisions you don't know about.

Water systems. Maintenance. Non toxic cleaning agents.
Who they choose to work with.

(They could have gone corporate to save time and cut costs- but they continue to maintain their long standing relationships with small artisans and vendors (like me!)

No big PR machine behind them.
Just high standards.

In restaurants like those of Ana Sortun - @sortunchef @moepastries - every decision is intentional.

Awards don’t come from one thing.
They come from everything...

Chef Sarah @sofrabakery in Cambridge makes an amazing meal for four (or two meals for two) every week. She even handwrites and illustrates the menu. You can subscribe for a week or for months, and either pick it up or have it delivered.

What an incredible addition to your weekly meal plan. She puts so much heart and soul into every box.
