So yes, it’s harvesting some hateful reactions.
But I believe it’s worth reading.
It provides chronology, context and truthful sources on events that have never been reported thoroughly in Spanish.
It gives voice to top professionals that work the floor in Spain with diverse approaches to service: classics and vanguardists are represented with truth and respect.
And finally, it delivers a conclusion that takes a clear position: HOSPITALITY IS ABOUT RECEIVING AND INCLUDING.

On the one hand, both procedures force the staff to go “around the table” twice, doubling time and dedication that could be invested in other activities to improve the whole service, while giving more intimacy to guests.
But on the other hand, and much more importantly, both “ladies first” and “elder first” protocols increase the probability of troubling costumers.
Waiting staff are not “gender detectors” -and as we can easily understand about age, because nobody enjoys being called old-, no one likes to be misgendered.
It’s simple: it hurts; and hurting guests is the most undesirable thing in hospitality.
Years ago most restaurants decided not to serve the elder first anymore, and no one complains about it.
What is so hard to understand about gender?
How you think tables are going to be served in 5 years?
